13 Jan Banana Bread Cookies with Dulce de Leche Swirl
I love bananas in general but I love them even more so when they over ripen and I am able to use them in baking! These banana bread cookies have a cakey texture and are topped with a swirl of dulce de leche.
Ingredients:
3 Cups all-purpose flour
1 tsp Baking soda
1 tsp Baking Powder
1 tsp Fleur de sel
1 Cup unsalted butter, softened
1 Cup sugar
1 cup light brown sugar firmly packed
2 Large eggs
2 Teaspoons Vanilla
1 1/2 cups Dulce de Leche
4 Over ripened bananas cut into chunks
Directions:
Preheat over to 350 degrees F. Line cookie sheet with parchment paper and set aside.
Whisk together flour, baking soda, baking powder, salt and set aside. Using a standing mixer, with paddle attachment, beat together butter, sugar, brown sugar, eggs, and vanilla on low speed.
Gradually add in the flour mixture and stir until no flour is visible. Add in bananas. Add in 1 cup of the dulce de leche.
Drop dough by the tablespoon onto lined cookie sheet. With the remaining 1/2 cup dulce de leche, fill a pastry bag and attach a small pointed nozzle. Squeeze dulce de leche in a zig zag pattern over the cookies. Bake for 8-10 minutes. Remove from over and let cool on baking sheet for a few minutes before transferring to a wire rack.
