21 Aug Birthday Cake Popsicles
Today I will celebrate being one year older and I am very motivated to make the following year a great one! Cake batter ice cream is one of my favorite ice cream flavors and I thought, why not turn it into the perfect popsicle for my birthday?
This popsicle is filled with soft cake pieces covered in creamy coldness. The colorful sprinkles and vibrancy add fun to the finished popsicle.
Ingredients:
1 cup heavy cream
1 cup whole milk
4 large egg yolks
1 tsp vanilla extract
pinch of salt
1/3 cup boxed cake mix
1/4 cup sprinkles
Tools:
popsicle sticks
popsicle molds
Directions:
Set up an ice bath near the stove.
In a medium sized saucepan over medium heat, warm the cream and milk until it simmers (about 5 minutes). In a heatproof bowl, whisk together the egg yolks sugar and salt until well combined and doubled in volume (about 2 minutes). Once it has doubled in volume, add half of the simmering milk mixture to the egg mixture and whisk until smooth. Transfer the egg mixture into the simmering saucepan and place over medium heat. Stir for 1-2 minutes or until it can coat the back of a wooden spoon. Remove from heat and immediately stir in the cake mix. Stir until well combined.
Place the saucepan into the ice bath and let cool completely. Stir in the sprinkles and then transfer to ice pop molds. Freeze for at least 3 hours or up to 3 days.
