23 Feb Maple Bacon Pear Salad
I grew to love the combination of maple and bacon ever since I was a kid and the maple syrup on my pancakes would ooze over onto the bacon side of my plate. The salty sweet combination sang notes to my taste buds. Today, salty sweet combinations are quite popular. This maple bacon pear salad is a great afternoon snack or light lunch.
Ingredients:
5 slices thick cut bacon
5 tbs. maple syrup
3 hard boiled eggs
1/2 red onion
2 bartlett pears
1/2 cup plain greek yogurt
dash of salt and pepper
Directions:
Preheat oven to 350 degrees F. Place bacon strips on a cookie try and drizzle 1 tbsp of maple syrup across each of the 5 strips. Bake for 20 minutes.
Prepare cutting board to chop ingredients. Note that all ingredients should be similar in size when chopped. Chop both the red onion and the pears, combine the two ingredients in a large bowl. Once the bacon is finished baking, remove from oven, let cool. Chop into small strip pieces and toss into the bowl. Chop up eggs and add to bowl.
Fold in 1/2 cup plain greek yogurt and add salt & pepper to taste. Make sure all ingredients are well combined, let chill in the refrigerator for 1-2 hours before serving. Serves 4-5.
